Avocado Toast

IMG_3247The ad council for avocado growers has been in overdrive lately. Move over guacamole. Make room for mashed avocado as a healthy spread for your morning toast. Avocado is celebrated as one of the healthy fats that should be part of our diets.

Up to this point, my connection with avocados has been pretty much limited to guacamole and chips, but I decided to give spreading it on toast a try. And I liked it.

Recognizing that I need protein in the morning, I added a sliced hard boiled egg, along with a sliced tomato to my toast. A touch of sea salt and freshly ground pepper, and breakfast was served. For me; not the Big Guy. I didn’t even offer this as an option for him, knowing in advance what his reaction would be.

The thing is, given a choice, I would always have a thin open-faced sandwich. What the French refer to as a tartine. So a slice of crunchy toast spread with avocado is a perfect base for a number of other toppings. Think I’ll add some ham this morning.
