Spiralized Vegetable Soup

Just add a scoop of roasted veggies to hot broth. Think about adding a scoop of cooked quinoa as well. Just for the record, quinoa is great in soup. Better than rice because it’s packed with protein. Having bowls of spiralized vegetables and quinoa all prepped and ready in the refrigerator is a huge time saver.

And now for a little creativity. In the mood for Italian? Stir in a spoonful of pesto and sprinkle with grated Parmesan. Looking for something with Oriental flare? Stir in a little sesame oil and/or Sriracha and sprinkle with scallions. A little curry might be nice, or perhaps some Aleppo Pepper for a Middle Eastern kick.
