Newly Inspired

The promise of early spring has been dimmed a bit by a chilly rain and the nasty rumblings of potential snow during the coming weekend. Shouldn’t be surprised by this. It always snows at some point near St. Patrick’s Day. Strange, but unfailingly true.

Thinking about a Facebook group that I joined devoted to sharing spiralizer recipes. This comes under the heading that there are groups for everything! It also has something to do with the fact that I’ve been knocked down with a nasty cold and been spending more time than usual on the computer this week.

It’s been interesting to see the different recipes and ideas that people contribute. As a bonus, joining this group has caused me to go through the recipes that I’ve developed for the Spiralizer. I had forgotten about some of them, and was honestly surprised by how many there were. I feel as though I have something to share with the group.

Feeling newly inspired. Planning to spiralize and roast a number of vegetables this morning. I came across my old recipe for vegetable quesadillas that has a lot of appeal. Roasted vegetable soup might be a good idea as well.

As for the weather, I think there’s hope. A bird is singing outside my window.
