Hot Lunch

IMG_1898Snow is one thing, but feeling as though you’re walking into a freezer as you go out the door is getting decidedly old. Today was definitely a hot lunch kind of day.

Just for the record, quinoa is great in soup. Better than rice because it contains the protein kick that gets me through the afternoon. Having bowls of spiralized vegetables and quinoa all prepped and ready in the refrigerator is a huge time saver.

Just add a scoop of roasted veggies and and a scoop of quinoa to hot broth. And now for a little creativity. In the mood for Italian? Stir in a spoonful of pesto and sprinkle with grated Parmesan. Looking for something with Oriental flare? Stir in a little sesame oil and/or Sriracha and sprinkle with scallions. A little curry might be nice, or perhaps some Aleppo Pepper for a Middle Eastern kick.

As much as I love a salad of quinoa and vegetables with a spicy peanut dressing, there are definitely days when only soup will do.
