Growing Tired of Spoodles and Zoodles

Not me. The Big Guy. I mentioned something earlier about roasting a chicken for dinner. He liked that idea, but suggested that maybe we could have “regular” vegetables. “Like cut up or mashed.” Might be time to give the Spiralizer a little rest.

There are really good points to having a bowl of mixed roasted spiralized root veggies in the frig. The quesadillas were simple to pull together and great. Yesterday, I wanted some soup. It was easy to add a big scoop of spiralized veggies to chicken broth, spice it up a bit and heat it in the microwave. Sort of like noodle soup, but with vegetables instead.

IMG_1775And then there are the myriad of lunch bowl possibilities. Add some quinoa (or skip the quinoa and add any protein, maybe chicken or a hard boiled egg or leftover salmon) to a bowl of spiralized veggies. Sprinkle with pomegranate seeds and walnuts. Or sunflower seeds or shelled pistachios. Add a simple dressing. Filling and good.

IMG_1792Frank’s interest in the great spiralizing project might be waning, but he really liked yesterday’s spiralized hash browns for breakfast. But tonight, I think I’ll make roasted carrots, onions and potatoes cut in chunks to go with the chicken. I like to keep the Big Guy happy.
