Start Over Monday

ImageSnowing again. The simple fact that it’s March means that today’s weather is a mere bump in the road to Spring. Speaking of Spring, it’s time to lighten up in the food department. I’ve been on the fish taco diet lately, with maybe some onion rings ( Stars, in Hingham, has world class onion rings, by the way,) and fried calamari thrown in for good measure. Socializing is a good thing; the menu choices I’ve been making lately, not so good!

Oh well, it’s Monday. Doesn’t every diet start on a Monday? Not that I plan to go on a real diet. That’s sort of like joining a gym in my mind. Really good in theory, but without staying power. A trip on the treadmill and a nod to the currently trendy ( but still a good idea ) Meatless Monday for dinner might be good places to start.

On the subject of Meatless Monday, the marriage of a leafy green ( broccoli rabe, Swiss chard, kale, spinach ) sautéed in garlicky olive oil, seasoned with salt and red pepper flakes, tossed with pasta and topped with grated or shaved Parmesan is simple and good.

Another technique is to toss broccoli flowerettes or cauliflower or cherry tomatoes with olive oil and breadcrumbs and roast them until they’ve starting to caramelize before you add them to the pasta. You could thin this out with a little pasta water if it’s too dry. Barilla Plus adds a little extra fiber without sacrificing flavor.

Enough about food. Off to the treadmill.
